J'aime la bonne bouffe. Mais la "starisation" constatée ces 20 dernières années des grands chefs me laisse perplexe.

Pour sûr, ces grands noms de la gastronomie ont porté haut le drapeau de la culture française à travers le monde. Mais en ce qui me concerne, moi, péquin moyen, leur oeuvre n'a pas changé grand-chose à mon existence.

Au contraire même, les petits plats qu'ils nous "mitonnent", en vendant leur nom à de grandes marques, sont à la gastronomie, ce que les "2 be 3" sont à la chanson française. Un chanteur, un écrivain, un peintre, laissent des traces tangibles, accessibles à tous. Mais un cuisinier ou un patissier ?

Combien sont-ils, ceux qui ont pu gouter aux créations d'un Marc Veyrat, d'un Bocuse ou d'un Ducasse? Pas moi en tout cas. Pour beaucoup, accéder à la table d'un de ces grands chefs reste le rêve d'une vie, qu'on réalise quand on a touché un quarté dans l'ordre, ou quand la grand-tante Marcelle passe par-dessus la balustrade.
